Lamb Meatballs in Spicy Tomato Sauce
Ingredients
400g Minced lamb
1½ Tablespoons of olive oil
3 Shallots
3 Cloves garlic
1 Small bunch mint leaves
3 Teaspoons ground cinnamon
Method
1. Place a baking tray with olive oil in the oven and pre-heat to 220ºC/425ºF.
2. Take the shallots, garlic and mint leaves and chop finely.
3. In a mixing bowl, combine the chopped mixture with the minced lamb and add the ground cinnamon.
4. Using the mixture, make small meatballs, rolling them in your hands to shape. Remove baking tray from oven. Add the meatballs and stir them around in the hot oil.
Return tray to oven for 25 minutes or until meatballs are browned.
5. Transfer the meatballs to a heatproof dish and pour Knorr Special Recipe Spicy Tomato Soup over them. Return to oven for a further 15 minutes.
Serving Suggestion: Serve with basmati rice and garnish with fresh mint leaves.
